Professor’s is a family-owned restaurant which was re-opened in the Spring of 2017. The restaurant was first opened in 1976 as Professor Pittewurst Panaceatic Inn by Professor Pittewurst where they served amazing sandwiches and created a unique atmosphere. The sandwiches have been local favorites for over 40 years.
Along with the great history of Professor’s restaurant, the building itself has had a great history. For instance, the north half of this building once served as the depot in Yocemento, Kansas, located 5 miles west of Hays. Then, in the early 1920’s, it was moved to this location to serve as the home of the American Legion.
Today, Professor’s is owned and operated by us, the Jensen family and we offer an array of healthy options including sandwiches, soups, and salads. We also offer raw honey and homegrown mushrooms, they’re served with a number of our dishes or for individual purchase. The honey has been harvested locally at Jensen Farms in Ellis County, Kansas, and it helps as a natural sweetener of our signature lemonade. And our mushrooms are harvested locally right here at Professors.

Mushrooms: Fresh, homegrown & straight to your palate.
At Jensen Farms we grow a variety of gourmet mushrooms, specializing in oyster mushrooms. Mushrooms connect the world together and oysters are one of the most versatile mushrooms. We grow ours on wheat stray & cottonseed hulls but they can be found on hardwoods throughout the world.
The caps can be from 2-15 inches and can be white, yellow, brown, tan or even pink. Oyster mushrooms have a unique scent, described as sweet licorice.
Oyster are one of the few carnivorous mushrooms because its mycelia will kill and eat nematodes and bacteria, thus making them wonderful for cleaning up the environment.
Oyster mushrooms are low in calories, fat-free & very low sodium while at the same being high in protein, fiber, iron, zinc, potassium, phosphorus selenium, calcium, folic acid, vitamins B1, B3, B5, B12, C & D.
They’ve also have been found to have certain medicinal properties such as cholesterol lowering, anti-oxidant & anti cancer. And they taste wonderful.
We grow them in the basement of our sandwich shop and serve them fresh on our menu. We also sell them retail at the local food market and are increasing production for wholesale contracts.

Here in the Jensen Family we’ve always grown our own food and cared about the Earth, but since we started raising honeybees it has totally changed the way we look at the world and what we eat. This building has given us a way to share our love of food, especially honey and mushrooms with you.
